Ingredients
Servings:
Crispy Split Pea Breadcrumbs
- 1/2 cup dry green split peas
- 1 cup panko breadcrumbs
- 1/4 cup finely grated Parmesan
- 1 tbsp extra virgin olive oil
- 1/2 tsp garlic powder
- 1/2 tsp Italian seasoning
- 1/4 tsp salt
- 1/2 tsp black pepper
Radicchio Salad
- 1 large head radicchio thinly chopped
- 1/2 cup chopped parsley
- 1/4 cup shaved Parmesan
- 1/3 cup toasted walnuts or hazelnuts
Buttermilk Dressing
- 1/4 cup buttermilk
- 2 tbsp extra virgin olive oil
- 2 tbsp lemon juice
- 1 tsp Dijon mustard
- 1 tbsp honey
- 1/2 tsp salt
- 1/2 tsp black pepper
Instructions
-
Soak radicchio! To remove bitterness, thinly slice radicchio and submerge in cold water for 45-60 minutes, drain and spin radicchio dry. Set aside.
-
Cook the split peas: rinse 1/2 cup dry green split peas. Add split peas to a medium saucepan with 1 1/2 cups water or vegetable broth and a pinch of salt. Bring to a boil, then reduce to a gentle simmer. Cook 25-30 minutes, uncovered, until split peas are tender but not mushy.
-
Drain split peas well and spread on a clean kitchen towel or paper towels. Pat very dry: this is key to getting them crispy! Proceed with the recipe, using 1 cup cooked split peas for the crispy split pea breadcrumb mixture. Save extra split peas in an air-tight container in the refrigerator for up to three days to add to salads, soups, etc.
-
Crisp the split peas: Preheat oven to 425°F and line a baking sheet with parchment paper. Add cooked split peas to baking sheet with extra virgin olive oil, garlic powder, Italian seasoning, salt and pepper. Roast for 20-25 minutes, tossing halfway through, until golden and crispy. Remove baking sheet from oven, sprinkle panko over the split peas, toss to combine, and roast for another 5-7 minutes, until panko is golden and crisp. Remove from the oven and immediately toss with Parmesan.
-
Make the dressing: whisk together buttermilk, olive oil, lemon juice, Dijon mustard, honey, salt and black pepper. Set aside.
-
Make the salad: Add soaked and drained radicchio, parsley, shaved Parmesan and nuts to a large bowl.
-
Toss the salad with the dressing, then fold in the crispy Parmesan split pea breadcrumb mixture just before serving.
-
Finish with extra Parmesan and a squeeze of lemon. Enjoy!
