  • 1canChickpeas 15 oz, rinsed and drained
  • 6ozSmall Pastaditalini, shells, or elbows
  • 2tbspOlive Oil
  • 2clovesGarlic minced
  • 3TbspTomato Paste
  • 1/4tspCrushed Red Pepper optional
  • 2cupsVegetable Broth
  • Salt and Pepper to taste
  • 1/4cupGrated Parmesan Cheese plus more for serving
  • Fresh Parsley chopped (optional)

Instructions

  1. Heat olive oil in a medium size pot over medium heat. Add garlic (and crushed red pepper if used) and sauté until fragrant, ~1 min. Add tomato paste and cook for an additional 2 minutes.
  2. Add chickpeas and stir for 2–3 minutes.
  3. Pour in the broth and bring to a gentle simmer. Add pasta and cook until al dente, stirring occasionally, adding a bit more water if needed.
  4. Stir in Parmesan cheese until creamy. Season with salt and pepper. Remove from heat.
  5. Sprinkle with more Parmesan and parsley if desired. Serve warm.
