Servings:
- 1canChickpeas15 oz, rinsed and drained
- 6ozSmall Pastaditalini, shells, or elbows
- 2tbspOlive Oil
- 2clovesGarlicminced
- 3TbspTomato Paste
- 1/4tspCrushed Red Pepperoptional
- 2cupsVegetable Broth
- Salt and Pepperto taste
- 1/4cupGrated Parmesan Cheeseplus more for serving
- Fresh Parsleychopped (optional)
Instructions

Heat olive oil in a medium size pot over medium heat. Add garlic (and crushed red pepper if used) and sauté until fragrant, ~1 min. Add tomato paste and cook for an additional 2 minutes.

Add chickpeas and stir for 2–3 minutes.

Pour in the broth and bring to a gentle simmer. Add pasta and cook until al dente, stirring occasionally, adding a bit more water if needed.

Stir in Parmesan cheese until creamy. Season with salt and pepper. Remove from heat.

Sprinkle with more Parmesan and parsley if desired. Serve warm.
