Servings:
Salad:
- 1/2 cup chickpeas
- 1/2 small cucumber sliced
- 1/2 cup tomatoes diced
- 1/4 cup olives kalamata; sliced
- 1/2 cup feta cheese
- 1/2 cup spinach
Dressing:
- 2 tbsp olive oil
- 1 tbsp balsamic vinegar
- salt and pepper to taste
