Servings:
- 1/2 cup lentils, French cooked
- 1/4 cup jicama diced
- 1/4 cup mango diced
- 1/4 cup cucumber diced
- 1 tbsp mint chopped
- 1 tsp lemon juice fresh
- salt to taste
- cilantro fresh
- endive leaves
Instructions

Mix all the ingredients together except for the endive leaves and adjust seasoning if needed.
