Ingredients

Servings:

  • 1/2 cup lentils, French cooked
  • 1/4 cup jicama diced
  • 1/4 cup mango diced
  • 1/4 cup cucumber diced
  • 1 tbsp mint chopped
  • 1 tsp lemon juice fresh
  • salt to taste
  • cilantro fresh
  • endive leaves

Instructions

  1. Mix all the ingredients together except for the endive leaves and adjust seasoning if needed.
  2. Fill the endive leaves with the lentil salad.
