Servings:
Salad:
- 1/2 cup black beans
- 1/4 cup corn kernels
- 1/2 cup tomatoes assorted cherry; diced
- 1/2 avocado diced
- 1/4 cup onion red; diced
- 3 tbsp cilantro
Creamy Avocado Dressing:
- 1/2 avocado
- 1/2 lime juiced
- 1 tbsp olive oil
- salt and pepper to taste
Instructions

Add dressing ingredients into a small mixing bowl, stir vigorously with a fork until dressing is smooth.

In a mason jar add dressing, black beans, corn, tomatoes, avocado, red onion, cilantro. Shake before eating to coat the salad with dressing.
