Ingredients

Servings:

Salad:

  • 4 cups lentils, black cooked (2 cups dry yields about 4 cups cooked)
  • 1/2 onion red; thinly sliced
  • 2 cups spinach fresh; or arugula is nice
  • 1/2 cup walnuts toasted, chopped

Dressing:

  • 1/3 cup olive oil extra virgin
  • 2 cloves garlic minced
  • 1/2 teaspoon salt sea
  • 2 teaspoons mustard dijon (or another strong)
  • 1/4 teaspoon pepper black; freshly ground
  • pinch sumac ground
  • fresh herbs to garnish – dill, parsley, etc.
  • 1 lemon juiced, to finish

Instructions

  1. In a large mixing bowl, combine all ingredients except "for the dressing" ingredients and stir to combine. Set aside.
  2. In a small mixing bowl, combine the dressing ingredients. Add to the salad when ready to serve.
  3. Store in an airtight glass container separately from the dressing for up to one week.
