Servings:
Salad:
- 4 cups lentils, black cooked (2 cups dry yields about 4 cups cooked)
- 1/2 onion red; thinly sliced
- 2 cups spinach fresh; or arugula is nice
- 1/2 cup walnuts toasted, chopped
Dressing:
- 1/3 cup olive oil extra virgin
- 2 cloves garlic minced
- 1/2 teaspoon salt sea
- 2 teaspoons mustard dijon (or another strong)
- 1/4 teaspoon pepper black; freshly ground
- pinch sumac ground
- fresh herbs to garnish – dill, parsley, etc.
- 1 lemon juiced, to finish
Instructions

In a large mixing bowl, combine all ingredients except "for the dressing" ingredients and stir to combine. Set aside.

In a small mixing bowl, combine the dressing ingredients. Add to the salad when ready to serve.

Store in an airtight glass container separately from the dressing for up to one week.
