Servings:
- 1 1/2 cups split peas dried
- 1 28 oz can tomatoes crushed
- 15 15 oz can coconut milk
- 1/2 cup onion sweet; diced
- 3 cloves garlic minced
- 1 tbsp curry paste green
- 1 tbsp turmeric
- 2 tsps curry powder
- 1/2 tsp ginger ground
- 1/2 tsp salt or more to taste
- 1 cup cream heavy
- 3 cups rice, basmati
- cilantro fresh; for garnish, optional
Instructions

Place all ingredients except cream, rice and cilantro in slow cooker

Cover and cook on high for 3-4 hours or low for 6-8 until peas are tender

Stir in cream (or to make it vegan you could use refrigerated plain coconut milk)

Cook rice according to package directions

Serve rice topped with split pea curry and garnish with cilantro
