Ingredients

Servings:

For the salad:

  • 2 cups lentils cooked
  • 2 cups white beans cooked; or 1 can white beans, rinsed and drained
  • 4 kale curly; stems removed, leaves chopped and massaged
  • 1/2 cup onion red; thinly sliced
  • 2 – 3 tomatoes Roma; chopped

For the dressing:

  • 1/2 cup tahini
  • 1 lemon juiced
  • 2 tsp maple syrup
  • salt to taste
  • water (if needed, to reach desired consistency)
  • 4 – 5 tortillas soft wraps

Instructions

  1. Place all the salad ingredients in a large bowl. Mix well.
  2. In a small bowl, add all the dressing ingredients. Mix well.
  3. Pour dressing over salad and mix until everything is incorporated.
  4. Spoon about 1 cup of the mixture onto each tortilla, wrap and serve
